Items needed to prepare Mango Rabri:
- One litre of whole cream milk (the rabri is creamy when the milk is thick)
- Two luscious, ripe mangoes with the pulp removed
- Half a cup of sugar (you can adjust the amount to suit your preferences)
- 1/4 teaspoon powdered cardamom (for scent)
- Eight to ten saffron threads (soaked in a little amount of milk; this will add flavor and color)
- 10–12 chopped pistachios and almonds (for garnish)
- To grease the pan, use one teaspoon of Desi Ghee.
Simple recipe for Mango Rabri:
First, add one teaspoon of ghee to a heavy-bottomed skillet to oil it. By doing this, the milk won't adhere to the bottom. Heat 1 liter of full-cream milk in a pan over a medium heat.
Once the milk reaches a boil, lower the heat and allow it to cook gradually. To keep the milk from sinking to the bottom, keep stirring it occasionally.
The milk will thicken and begin to form cream on the sides as it cooks. Continue to scrape this cream and stir it into the milk. The rabri will have a genuine taste and thickness thanks to this cream.
When the milk is nearly half-cooked, add 1/2 cup sugar and stir thoroughly. Cook until the milk's sugar has dissolved.
Reduce the flame even further, then add the puréed mango pulp and stir thoroughly. To ensure that the mango flavor is well dissolved in the milk, simmer it on low heat for five to seven minutes.
Next, add the soaked saffron threads to the pan along with 1/4 teaspoon of cardamom powder. Cook for a further two to three minutes.
Now switch off the gas and add chopped pistachios and almonds to the rabri.
To chill, keep the prepared rabri in the refrigerator. Serve the chilled mango rabri now! Enjoy it after taking it out in a bowl.
